Steamed squash salad

Indulge in the delightful flavors of tender steamed squash fused with vibrant seasonal greens and zesty vinaigrette in this refreshing salad.

Ingredients:

  • 4 small slender zucchini, cut into 1/4-inch rounds and parboiled for 1 minute
  • 1/3 cup extra virgin olive oil
  • Grated zest and juice of two large limes
  • 1/4 teaspoon each ground cumin and cardamom
  • 1/4 teaspoon pressed or minced garlic
  • Salt and freshly ground black pepper

Instructions:

  1. Blanch zucchini for 60 seconds, then remove, dry gently and distribute evenly onto four serving plates. Arrange zucchini in circular patterns on each plate.
  2. Mix together the olive oil, lime zest and juice, cumin, cardamom and minced garlic. Season with salt and pepper. Taste and correct the level of acidity. Drizzle the dressing over the zucchini. Once the chicken is cooked, place it on top of the zucchini, with the skin facing upwards.
