Steak tips

Ingredients:
- 2270g well-marbled sirloin flap meat
- 180g 85/15 olive oil/salad oil blend
- 110g Tuckaway's Steak Seasoning, recipe follows
- 40g apple cider vinegar or red wine vinegar
- Potato salad, for serving
- Coleslaw, for serving
- 4 tablespoons orange juice
- 1/60g minced garlic
- 1/60g minced onion
- 1/60g ground mustard
- 1/60g mustard seed
- 1/110g granulated garlic
- 1/110g granulated onion
- 1/60g salt
- 1/60g finely ground black pepper
- 1/60g coarsely ground black pepper
Instructions:
- Using a sharp knife, remove all the silverskin and most of the surface fat from the meat. Dice the meat into 3-inch cubes and transfer them to a non-metallic container.
- Combine the oil, Tuckaway Steak Seasoning, and vinegar in a bowl; then drizzle over the meat. Use your hands to ensure the marinade coats all sides of the meat. Allow the meat to marinate in the fridge for 3 to 5 days for maximum flavor!
- Cook on the grill to your preference and pair with a side of your choice such as homemade potato salad, coleslaw, or any other tasty side dish you prefer.
- In a separate bowl, whisk together the orange juice, minced garlic, minced onion, ground mustard, mustard seed, granulated garlic, granulated onion, salt, and pepper.
