Steak & strawberry spinach salad
Delight in a symphony of flavors with this savory Steak & Strawberry Spinach Salad. Succulent steak paired with sweet strawberries, all on a bed of fresh spinach. Taste bliss awaits!
Ingredients:
- 450g boneless strip steak or rib-eye, trimmed
- ¾ teaspoon kosher salt, divided
- ½ teaspoon ground pepper, divided
- 2 tablespoons extra-virgin olive oil plus 1/2 cup, divided
- 2 tablespoons white-wine vinegar
- ½ teaspoon grated orange zest
- 2 tablespoons orange juice
- 1 small shallot, halved and thinly sliced lengthwise
- 1 small clove garlic, grated
- ½ teaspoon honey
- 2 slices whole-wheat country bread, preferably day-old, torn into bite-size pieces
- 1 5-ounce package baby spinach
- 2 cups thinly sliced strawberries
Instructions:
- Heat up the grill to medium-high temperature. Dry the steak using a paper towel; season both sides with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Set it aside.
- Mix together 2 tablespoons of oil, vinegar, grated orange peel, orange juice, minced shallot, garlic, honey, 1/8 teaspoon of salt and the remaining 1/4 teaspoon of pepper in a large bowl. Set it aside.
- Combine the remaining 1/2 cup of oil and bread in a small saucepan. Cook on medium-high heat, stirring occasionally, until the bread edges turn golden brown, which takes around 10 to 13 minutes. Use tongs to move the croutons to a plate lined with paper towel as they get ready, and immediately sprinkle some of the remaining 1/8 teaspoon of salt on them.
- At the same time, grease the grill rack. Place the steak on it and cook, turning it once, until a thermometer inserted in the thickest part shows 125°F for medium-rare, which usually takes 6 to 8 minutes in total. Then, transfer the steak to a clean cutting board and let it rest for 5 minutes.
- Mix spinach, strawberries, and the croutons with the previously made dressing; toss them together. Cut the steak into slices and serve it with the salad.
