Sriracha & lime potato salad

Deliciously zesty Sriracha and lime-infused potato salad bursting with tangy flavors, making it a perfect side dish for any meal.

Ingredients:

  • 750g new potatoes, halved if large
  • 80g mayonnaise
  • 50g soured cream
  • 2 tbsp sriracha
  • 1 lime, zested and juiced
  • 1 tsp honey
  • 6 spring onions, finely sliced
  • ½ small bunch of coriander, finely chopped
  • ½ tsp chilli flakes (optional)

Instructions:

  1. Place the potatoes in a large saucepan filled with cold water and add salt. Bring the water to a boil, then reduce the heat and let it simmer for 15-18 minutes until the potatoes are soft. Drain the water and let the potatoes cool down completely.
  2. Combine the mayonnaise, sour cream, sriracha sauce, lime zest, lime juice, honey, half of the spring onions, most of the coriander, and some salt and pepper in a bowl. Whisk well until all ingredients are well mixed.
  3. Mix the cooled potatoes with the sriracha-mayonnaise dressing until all the potatoes are evenly coated. Transfer to a serving bowl and sprinkle the remaining spring onions, coriander, and chili flakes on top, if desired.
