Sriracha & lime potato salad
Deliciously zesty Sriracha and lime-infused potato salad bursting with tangy flavors, making it a perfect side dish for any meal.
Ingredients:
- 750g new potatoes, halved if large
- 80g mayonnaise
- 50g soured cream
- 2 tbsp sriracha
- 1 lime, zested and juiced
- 1 tsp honey
- 6 spring onions, finely sliced
- ½ small bunch of coriander, finely chopped
- ½ tsp chilli flakes (optional)
Instructions:
- Place the potatoes in a large saucepan filled with cold water and add salt. Bring the water to a boil, then reduce the heat and let it simmer for 15-18 minutes until the potatoes are soft. Drain the water and let the potatoes cool down completely.
- Combine the mayonnaise, sour cream, sriracha sauce, lime zest, lime juice, honey, half of the spring onions, most of the coriander, and some salt and pepper in a bowl. Whisk well until all ingredients are well mixed.
- Mix the cooled potatoes with the sriracha-mayonnaise dressing until all the potatoes are evenly coated. Transfer to a serving bowl and sprinkle the remaining spring onions, coriander, and chili flakes on top, if desired.
