Spring salad
Delight your palate with a vibrant Spring salad bursting with fresh greens, crunchy vegetables, and zesty dressings. Perfect for a light and refreshing meal.
Ingredients:
- 1 head Romaine lettuce
- 1 head red butter lettuce or green leaf lettuce
- 4-5 radish, sliced
- 1 cucumber, peeled and diced
- 1/2 red onion, sliced thin
- 1/2 cup cherry tomatoes, halved
- 1/2 cup organic cottage cheese
- 1/2 cup Greek yogurt or sour cream
- 1 teaspoon salt
- 1/2 teaspoon fresh ground pepper
Instructions:
- Clean and pat dry the lettuce, then put it in a big bowl.
- Prepare the salad veggies by thinly slicing the radishes and red onion, peeling and dicing the cucumbers. Combine the vegetables with the greens in the bowl.
- Combine cottage cheese and Greek yogurt (you can also use sour cream if preferred) in a separate small bowl, season with salt and pepper, and thoroughly mix. Combine with the greens in the bowl.
- Halve the cherry tomatoes, place them on top of the salad, and serve.
