Spring salad

Delight your palate with a vibrant Spring salad bursting with fresh greens, crunchy vegetables, and zesty dressings. Perfect for a light and refreshing meal.

Ingredients:

  • 1 head Romaine lettuce
  • 1 head red butter lettuce or green leaf lettuce
  • 4-5 radish, sliced
  • 1 cucumber, peeled and diced
  • 1/2 red onion, sliced thin
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup organic cottage cheese
  • 1/2 cup Greek yogurt or sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper

Instructions:

  1. Clean and pat dry the lettuce, then put it in a big bowl.
  2. Prepare the salad veggies by thinly slicing the radishes and red onion, peeling and dicing the cucumbers. Combine the vegetables with the greens in the bowl.
  3. Combine cottage cheese and Greek yogurt (you can also use sour cream if preferred) in a separate small bowl, season with salt and pepper, and thoroughly mix. Combine with the greens in the bowl.
  4. Halve the cherry tomatoes, place them on top of the salad, and serve.
