Spring salad

Ingredients:
- 1 bunch watercress
- 1/2 bunch mint, chopped finely
- 3 radish bulbs, thinly sliced
- 2 chorizo sausages
- 200 grams haloumi
- 1 lebanese cucumber
- 1 green apple
- juice of 1 lemon
Instructions:
- Start by combining watercress, mint, and radish in a bowl and set it aside.
- Slice the haloumi into pieces about 1cm thick. Then, cut the chorizo into small bite-sized pieces. Cook both the haloumi and chorizo in a small pan over low heat until the haloumi turns golden on both sides and the chorizo is completely cooked.
- Once finished, transfer them to the bowl with the watercress, leaving the juices in the pan for added flavor.
- Julienne the cucumber and thinly slice the apple before adding them to the salad. Save this step for last to prevent browning.
- Pour the juices from the pan and lemon juice over the salad, and gently toss everything to ensure all ingredients are well combined.
- Plate the salad and serve promptly.
