Spring salad

Ingredients:
- 300 grams asparagus
- 125 grams natural tofu
- 100 grams fresh fava beans
- 80 grams fresh green peas
- 1 handful arugula
- Pinch salt and black pepper
- 1 tablespoon balsamic vinegar
Instructions:
- Start by boiling a pot of water with salt. Then, cook the asparagus for around 5 to 6 minutes. Prepare the peas and fava beans and keep them aside. Cook the tofu on the grill with a bit of salt and pepper. To assemble the dish, lay down a bed of arugula first, followed by arranged sliced asparagus, peas, fava beans, mint leaves, and grilled tofu on the top. Add balsamic vinegar for seasoning and decorate with more mint leaves for garnish.
