Spring green salad

Indulge in the freshness of spring with this vibrant green salad bursting with crisp lettuce, succulent vegetables, and zesty dressing. Perfect for a light and refreshing meal.

Ingredients:

  • 2 spring onions with enough vegetable stock to cover
  • 4 eggs, medium boiled
  • 1 cup fava beans, blanched and diced
  • 1/2 cup olive oil
  • 2 tablespoons butter, melted
  • Pinch allspice
  • Salt and pepper
  • 2 bunches ramps, quickly Sauteed
  • 12 stalks asparagus, trimmed and blanched
  • 1 roasted sweet potato, pureed with portion of onion liquid

Instructions:

  1. Saute onions in vegetable broth and set aside the liquid. Divide egg whites from egg yolks and dice them finely. Combine diced eggs with fava beans. Beat together olive oil, butter, reserved onion broth, allspice, salt, and pepper. Toss ramps and asparagus with the prepared mixture. Incorporate sweet potato mash into the recipe.
