- 2 celery sticks
- 1 half cup of fresh shaved corn

- 170g good quality goat cheese crumbled
- cracked peppercorn to taste
- 3 tablespoons extra virgin olive oil
- 1 to 2 tablespoons of good balsamic vinegar
- 1 quarter cup walnuts
- 2 green apples
- 1 cucumber
- 2 med sized carrots
Instructions:
- Arrange the spinach on a spacious serving dish. Utilize the spiralizer to create thin spirals with the apples and cucumber. Employ the spaghetti cutter to slice the zucchini, summer squash, cucumber, and carrots. Arrange them over the bed of spinach. Dice the celery into 1/4 inch chunks. Crumble the goat cheese.
