Indulge in a flavorful spinach and warm mushroom salad bursting with savory umami goodness. A delightful blend of earthy mushrooms and fresh spinach leaves create a culinary masterpiece.

Ingredients:

  • 8 cups spinach, tough stems removed
  • 2 cups coarsely chopped radicchio
  • 2 tablespoons extra-virgin olive oil, divided
  • 2 slices bacon, chopped
  • 1 large shallot, halved and sliced (1/2 cup)
  • 3 cups sliced mixed mushrooms, such as shiitake, oyster and cremini
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 2 tablespoons white balsamic vinegar
  • ½ teaspoon honey

Instructions:

  1. Mix together spinach and radicchio in a spacious mixing bowl.
  2. In a large skillet, warm up 1 tablespoon of oil over medium heat. Proceed by adding bacon and shallot and cook until the bacon turns crispy, which usually takes around 4 to 5 minutes. Then, introduce the mushrooms, salt, and pepper and continue cooking until the mushrooms become soft and cooked through, usually around 5 to 7 minutes. Take the skillet off the heat and blend in the remaining 1 tablespoon of oil, vinegar, and honey, ensuring to scrape off any browned bits. Without delay, drizzle the warm vinaigrette over the spinach mixture and mix well until everything is evenly coated.
