Spinach salad with warm maple dressing

Ingredients:

  • 1/3 cup avocado oil
  • 3 tablespoons balsamic vinegar
  • 1 1/2 tablespoons pure maple syrup
  • 3/4 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sliced almonds
  • 1 (5-ounce) bunch spinach, stemmed and roughly chopped (about 8 cups), or 8 cups baby spinach (140g)
  • 1/2 cup thinly sliced unpeeled Honeycrisp apple (from 1 small [6-ounce] apple)
  • 1/4 cup fresh blueberries
  • 30g feta cheese, crumbled (about 1/4 cup)
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions:

  1. Mix oil, vinegar, maple syrup, mustard, honey, paprika, salt, and pepper in a glass jar with a lid. Use an immersion blender to blend the ingredients together for approximately 30 seconds, or close the lid tightly and shake vigorously.
  2. Warm a small pan over medium-high heat. Put in the almonds and cook while stirring frequently until they become toasted and golden brown, which should take around 1 to 2 minutes. Take the pan off the heat, transfer the almonds to a plate, and keep them aside.
  3. Combine spinach, apple, blueberries, feta, and the toasted almonds in a large heatproof bowl. Set the bowl aside.
  4. Pour the prepared dressing into the pan and heat it over medium heat until it starts to simmer, which usually takes about 1 minute. Drizzle around 6 tablespoons of the warm dressing over the salad, mix well to cover all ingredients. Season with salt and pepper according to your preference. Serve the salad with the remaining warm dressing on the side, if desired.
