Spinach salad with warm bacon vinaigrette, red onion & avocado

Indulge in the rich flavors of a savory spinach salad topped with a warm bacon vinaigrette, red onion, and creamy avocado. Savor the blend of tastes in every bite.

Ingredients:

  • 230g spinach
  • 1 small red onion, thinly sliced
  • 1 small avocado, peeled and cut into 1/2-inch pieces
  • 4 strips bacon, cut into 1-inch pieces
  • 1 ½ tablespoons granulated sugar
  • ⅓ cup red-wine vinegar
  • 1 tablespoon water, as needed
  • Freshly ground pepper for garnish

Instructions:

  1. Rinse the spinach thoroughly under cold water and dry it using a salad spinner. Transfer the spinach, onion, and avocado to a salad bowl.
  2. In a skillet or medium saucepan, cook the bacon over medium heat, stirring regularly until it becomes crispy and browned, which usually takes about 4 minutes. Swiftly stir in sugar, then add vinegar carefully (expect bubbling). Keep stirring until the sugar is fully dissolved, which should take around 2 minutes. The resulting vinaigrette should have a slightly thinner consistency than maple syrup. Remove from the heat, taste it, and adjust by adding up to 2 tablespoons of water if you prefer a thinner vinaigrette or milder flavor. Drizzle the warm vinaigrette over the spinach, onion, and avocado. Mix well to coat and slightly wilt the spinach. Optionally, add pepper for extra flavor before serving immediately.
