Spinach salad with sweet balsamic and blood orange dressing

Tantalize your taste buds with a vibrant spinach salad drizzled with a sweet balsamic and tangy blood orange dressing.Delicious flavors in every bite!

Ingredients:

  • 340g cleaned and dried baby spinach
  • 1/2 small head of Boston or Bibb lettuce leaves, cleaned and dried
  • 90g fresh raspberries, rinsed and dried
  • 90g blackberries, rinsed and dried
  • 5-170g canned drained mandarin oranges or fresh Cara Cara segments
  • 40g honey roasted almonds or nuts of your choice
  • 1-60g crumbled Gorgonzola cheese
  • 1 tablespoon blood orange olive oil
  • 1 tablespoon White balsamic vinegar
  • 1 tablespoon raspberry balsamic vinegar
  • 2 teaspoons honey
  • 2-3 teaspoons sugar
  • Salt and pepper

Instructions:

  1. Mix together olive oil, vinegar, sugar, honey, salt, and pepper, and adjust the taste for sweetness. If you don't have blood orange oil, you can use a mixture of blood orange juice and light olive oil, or you can try using mandarin orange juice instead. Prepare your salad either on separate cold salad plates or in a large salad bowl. Pour the dressing over the salad and mix it in right before serving. I recommend starting with around half of the dressing and drizzling more as needed.
