Spinach salad with sweet balsamic and blood orange dressing

Ingredients:
- 340g cleaned and dried baby spinach
- 1/2 small head of Boston or Bibb lettuce leaves, cleaned and dried
- 90g fresh raspberries, rinsed and dried
- 90g blackberries, rinsed and dried
- 5-170g canned drained mandarin oranges or fresh Cara Cara segments
- 40g honey roasted almonds or nuts of your choice
- 1-60g crumbled Gorgonzola cheese
- 1 tablespoon blood orange olive oil
- 1 tablespoon White balsamic vinegar
- 1 tablespoon raspberry balsamic vinegar
- 2 teaspoons honey
- 2-3 teaspoons sugar
- Salt and pepper
Instructions:
- Mix together olive oil, vinegar, sugar, honey, salt, and pepper, and adjust the taste for sweetness. If you don't have blood orange oil, you can use a mixture of blood orange juice and light olive oil, or you can try using mandarin orange juice instead. Prepare your salad either on separate cold salad plates or in a large salad bowl. Pour the dressing over the salad and mix it in right before serving. I recommend starting with around half of the dressing and drizzling more as needed.
