Spinach salad with steak & blueberries
Delicious spinach salad with juicy steak and bursts of sweet blueberries, a perfect balance of flavors and textures in every bite.
Ingredients:
- 1 cup fresh blueberries, divided
- ½ cup chopped walnuts, toasted (see Tips)
- 3 tablespoons fruity vinegar, such as raspberry vinegar
- 1 tablespoon minced shallot
- 1 teaspoon sugar
- ½ teaspoon salt, divided
- 3 tablespoons walnut oil or canola oil
- 450g sirloin steak or strip steak (1-1 1/4 inches thick), trimmed
- ½ teaspoon freshly ground pepper
- 8 cups baby spinach
- ¼ cup crumbled feta cheese
Instructions:
- Heat up the grill to a medium temperature.
- In a food processor, blend together 1/4 cup of blueberries, 1/4 cup of walnuts, vinegar, shallot, sugar, and 1/4 teaspoon of salt until it forms a chunky paste. While the food processor is running, slowly pour in the oil until well combined. Move the dressing into a large bowl.
- Season the steak with pepper and the remaining 1/4 teaspoon of salt. Grease the grill rack (refer to tips). Grill the steak for approximately 5 minutes on each side for medium-rare, or 6 minutes on each side for medium doneness. Allow the steak to rest on a clean cutting board for about 5 minutes.
- Combine spinach with the prepared dressing in the bowl; mix well to cover the spinach leaves. Distribute the spinach equally onto 4 plates. Cut the steak into thin slices. Place the sliced steak on top of the spinach, followed by feta cheese, and the leftover blueberries and walnuts.
