Spinach salad with salmon, barley, and oranges

Ingredients:

  • 230g skinless salmon fillet
  • 170g smoked salmon, chopped
  • ⅓ cup mayonnaise
  • ⅓ cup chopped celery
  • 1 tablespoon chopped chives
  • 1 tablespoon chopped capers
  • 1 teaspoon grated lemon zest
  • black pepper
  • lettuce leaves
  • 8 slices pumpernickel bread

Instructions:

  1. Preheat the oven to 450° F. Cook the salmon fillet on a rimmed baking sheet until it is fully cooked, for about 6 to 8 minutes; allow it to cool down, then break it into small pieces.
  2. Mix together the smoked salmon, mayonnaise, celery, chives, capers, lemon zest, flaked salmon, and a quarter teaspoon of pepper in a medium-sized bowl.
  3. Separate the salmon salad and lettuce leaves evenly among the bread slices.
