Spinach salad with grapes and pancetta
Delight in the savory blend of crisp spinach, juicy grapes, and crispy pancetta in this flavorful salad bursting with fresh ingredients and vibrant flavors.
Ingredients:
- 2 bunches (10 oz.) spinach leaves, washed and dried
- 3 tablespoons balsamic vinegar
- 1/4 cup extra virgin olive oil
- 1/4 teaspoon salt
- 1/4 tsp black pepper, ground
- 1/2 cup (4 oz.) pancetta or bacon
- 1/4 cup pine nuts
- 1 cup fresh California grapes
- 1/2 cup red onions, thinly sliced (about 1/4 medium onion)
- 1/2 cup (2 oz.) parmesan cheese, shaved or grated
Instructions:
- Prepare a large bowl and place the spinach in it, then set it aside. In a separate small bowl, mix together balsamic vinegar, olive oil, salt, and pepper, and set it aside. Take a large saute pan, and on medium-high heat, cook the pancetta until it's almost crisp which should take about 5-7 minutes. Keep the fat in the pan and add pine nuts, stirring constantly for around 1 minute. Introduce grapes and red onions, and cook for another minute. Pour in the balsamic dressing and bring it to a quick boil, approximately 30 seconds. Turn off the heat and drizzle the hot dressing over the spinach. Quickly toss the salad to coat the leaves. The salad should be warm to serve.
