Spinach salad with garlic dressing

Ingredients:
- 230g bacon
- 3/4 cup olive oil
- 1/4 cup red wine vinegar
- Pinch salt and pepper

- 1 clove garlic, minced
- 450g leaf spinach, tough stems removed
- 230g mushrooms, thinly sliced
Instructions:
- Cook the bacon in a medium skillet over medium-high heat until it is crispy. Remove excess oil with paper towels and break it into pieces once it has cooled down. Keep it aside.
- Combine oil, vinegar, salt, pepper, and minced garlic in a small bowl by whisking together.
- Thoroughly wash the spinach leaves and then dry them using a salad spinner. Rip the leaves into small pieces and place them in a medium-sized salad bowl. Add the sliced mushrooms and crumbled bacon, and mix well. Pour 2/3 cup of the prepared dressing over the salad (store the remaining dressing for later use) and mix again. Serve immediately.
