Spinach salad with garlic dressing

Ingredients:

  • 230g bacon
  • 3/4 cup olive oil 
  • 1/4 cup red wine vinegar 
  • Pinch salt and pepper

  • 1 clove garlic, minced 
  • 450g leaf spinach, tough stems removed 
  • 230g mushrooms, thinly sliced 

Instructions:

  1. Cook the bacon in a medium skillet over medium-high heat until it is crispy. Remove excess oil with paper towels and break it into pieces once it has cooled down. Keep it aside.
  2. Combine oil, vinegar, salt, pepper, and minced garlic in a small bowl by whisking together.
  3. Thoroughly wash the spinach leaves and then dry them using a salad spinner. Rip the leaves into small pieces and place them in a medium-sized salad bowl. Add the sliced mushrooms and crumbled bacon, and mix well. Pour 2/3 cup of the prepared dressing over the salad (store the remaining dressing for later use) and mix again. Serve immediately.
