Spinach salad with dates

Ingredients:

  • dates, pitted, plus ¾ cup chopped dates
  • teaspoon finely grated lime zest
  • cup lime juice
  • cup vegetable oil, divided
  • Kosher salt and freshly ground black pepper
  • large shallots, thinly sliced
  • bunch flat-leaf spinach, trimmed

Instructions:

  1. Mix whole dates, lime zest, lime juice, and ⅓ cup oil in a blender until the mixture is smooth; add salt and pepper to taste.
  2. Warm the rest of the ⅓ cup oil in a medium saucepan on medium-high heat and sauté shallots, stirring frequently, until they turn golden brown and crispy, for about 5–7 minutes; place on paper towels to drain and season with salt.
  3. Combine spinach and diced dates with the prepared dressing. Sprinkle with crispy fried shallots on top.
