Spinach salad with dates

Ingredients:
- dates, pitted, plus ¾ cup chopped dates
- teaspoon finely grated lime zest
- cup lime juice
- cup vegetable oil, divided

- bunch flat-leaf spinach, trimmed
Instructions:
- Mix whole dates, lime zest, lime juice, and ⅓ cup oil in a blender until the mixture is smooth; add salt and pepper to taste.
