Spinach salad with cherries, goat cheese and walnuts

Delicious spinach salad with juicy cherries, creamy goat cheese, and crunchy walnuts. A perfect blend of sweet, tangy, and savory flavors.

Ingredients:

  • 6 cups lightly packed fresh spinach
  • 1 cup sweet cherries, pitted and cut in half
  • 110g fresh goat cheese, crumbled
  • 1/2 cup walnut halves, broken in pieces
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon walnut oil
  • 1 tablespoon champagne vinegar
  • 1 teaspoon honey
  • Squeeze lime juice
  • Freshly ground black pepper and sea salt to taste

Instructions:

  1. Blend the oils, champagne vinegar, honey, lime juice, pepper and salt using a whisk.
  2. Add the spinach to a spacious bowl and mix it with the vinaigrette, or pour it over the greens on each plate before you serve.
  3. Carefully mix in the cherries, goat cheese and walnuts.
  4. Separate the salad onto 4 plates and present.
