Spinach-pasta salad with shrimp
Try this flavorful spinach-pasta salad with succulent shrimp. A delightful blend of fresh ingredients that will tantalize your taste buds.
Ingredients:
- 3 tablespoons extra-virgin olive oil, divided
- 6 medium cloves garlic, sliced, divided
- 450g spinach
- ¼ teaspoon salt plus 1/8 teaspoon, divided
- 1 tablespoon lemon juice
- 450g shrimp (21-30 count), peeled and deveined
- ¼ teaspoon crushed red pepper
- 1 tablespoon finely chopped fresh parsley
- 1 ½ teaspoons lemon zest
Instructions:
- Heat up 1 tablespoon of oil in a large pot on medium heat. Cook half of the garlic until it starts to turn brown, for about 1 to 2 minutes. Put the spinach in and add 1/4 teaspoon of salt, mix well. Cook for about 3 to 5 minutes, stirring occasionally, until the spinach is mostly wilted. Take it off the heat and mix in lemon juice. Put it in a bowl and keep it warm.

- Turn up the heat to medium-high and pour the remaining 2 tablespoons of oil into the pot. Add the rest of the garlic and cook until it starts to brown, for about 1 to 2 minutes. Put in the shrimp, crushed red pepper, and the remaining 1/8 teaspoon of salt; stir and cook until the shrimp are just done, for about 3 to 5 minutes more. Serve the shrimp on top of the spinach, and garnish with lemon zest and parsley.
