Spinach and pear salad

Ingredients:
- 450g spinach, either baby spinach or large leaf
- 4 slices lean bacon
- 1 cup pecan halves
- 2 firm pears
- 2 tablespoons butter
- 1/4 cup champagne vinegar
- 1/4 cup apple cider vinegar
- 3/4 cup olive oil
- 1 teaspoon red pepper flakes
- 1/8 teaspoon sugar (a pinch)
Instructions:
- Clean and pat dry the spinach. If you are using spinach with large leaves, eliminate the stems and slice the spinach into strips.
- Fry the bacon until it's very crispy. Place on paper towels to remove excess oil and then crumble it into pieces.
- Remove the cores from the pears and cut them into thin wedges (approximately 3/8 inch). You don't need to peel them.
- Heat the butter in a large frying pan and once it turns slightly brown, add the pears. Sauté for a few minutes to achieve a buttery caramelized flavor, while ensuring the pear wedges remain crisp. Take them out of the pan.
- Prepare the vinaigrette: Blend the vinegars, olive oil, red pepper flakes, and sugar together.
- In a large salad bowl, combine the spinach, crumbled bacon, pecans, and the cooked pear wedges. Lastly, pour in the vinaigrette and mix everything together.
