Spinach and bacon salad

Savour the mouthwatering blend of fresh spinach leaves and crispy bacon in this delightful salad recipe. Perfect mix of textures and flavors awaits!

Ingredients:

  • 6 cups baby spinach leaves, washed and spun dry
  • 1 Granny Smith apple, halved, cored and thinly sliced
  • 6 slices bacon, sliced into 1/4" strips 
  • 1 small shallot, chopped
  • 1 tsp. Dijon mustard
  • salt and pepper to taste

  • 1/4 cup apple cider vinegar

Instructions:

  1. Combine spinach and apple slices in a spacious mixing bowl. Cook bacon strips over low heat until they are crispy. Take them out using a slotted spoon and place them on paper towels to remove excess oil. Next, saute shallots in the remaining bacon fat until they become soft and aromatic. Make a dressing by whisking together mustard, vinegar, and olive oil. Adjust the seasoning with salt and pepper according to your taste. Drizzle the dressing over the spinach, then add the bacon and gently mix to slightly wilt the salad.
