Spicy tuna, courgette & chickpea salad
Discover a zesty combination of spicy tuna, fresh courgette, and hearty chickpeas in this vibrant salad bursting with flavors and textures.
Ingredients:
- 1 lemon, zested and juiced
- 15g parsley, finely chopped
- 10g basil, finely chopped
- 2 garlic cloves, crushed
- 1 tbsp capers, rinsed and finely chopped
- 1 red chilli (deseeded, if you prefer less heat), finely chopped
- 160g can tuna in olive oil
- 2 courgettes, thinly sliced
- 2 x 400g cans chickpeas, drained and rinsed
Instructions:
- Combine the lemon zest and juice in a bowl and blend with the parsley, basil, garlic, capers, chilli, and some salt and pepper. Pour in the olive oil from the tuna can (approximately 2 tbsp), then stir in the zucchinis. Mix thoroughly to fully cover in the dressing, then let it sit to marinate for 15 minutes.
- Mix in the chickpeas and stir to mix all ingredients before breaking apart the tuna and mixing again. Serve immediately.
