Spicy tuna, courgette & chickpea salad

Discover a zesty combination of spicy tuna, fresh courgette, and hearty chickpeas in this vibrant salad bursting with flavors and textures.

Ingredients:

  • 1 lemon, zested and juiced
  • 15g parsley, finely chopped
  • 10g basil, finely chopped
  • 2 garlic cloves, crushed
  • 1 tbsp capers, rinsed and finely chopped
  • 1 red chilli (deseeded, if you prefer less heat), finely chopped
  • 160g can tuna in olive oil
  • 2 courgettes, thinly sliced
  • 2 x 400g cans chickpeas, drained and rinsed

Instructions:

  1. Combine the lemon zest and juice in a bowl and blend with the parsley, basil, garlic, capers, chilli, and some salt and pepper. Pour in the olive oil from the tuna can (approximately 2 tbsp), then stir in the zucchinis. Mix thoroughly to fully cover in the dressing, then let it sit to marinate for 15 minutes.
  2. Mix in the chickpeas and stir to mix all ingredients before breaking apart the tuna and mixing again. Serve immediately.
