Spicy squid salad

Ingredients:

  • 4 small squid, cleaned
  • 1 tablespoon roasted chili paste
  • 1 teaspoon sunflower oil
  • 1 teaspoon chopped ginger
  • 1 teaspoon chopped garlic
  • 1 teaspoon honey
  • 1 lime, juiced
  • 1 tablespoon fish sauce
  • 2 tablespoons sunflower oil
  • 1 teaspoon sesame oil
  • 1 cucumber
  • 1 medium pepper, deseeded and sliced lengthwise
  • 4 spring onions
  • 1 red Thai chili
  • 3 cups mixed salad leaves
  • 2 tablespoons chopped fresh mint leaves
  • 2 tablespoons chopped fresh cilantro leaves
  • Sesame seeds

Instructions:

  1. Heat up a grill until it reaches high temperature.
  2. Make cuts in the squid on a cutting board. Transfer it to a bowl with the pre-made roasted chili paste and oil. Stir thoroughly. Place the squid on a grill pan or barbecue and cook for a few minutes on each side until it turns golden brown. Take care not to cook it for too long, or the squid will become tough.
  3. While the squid is cooking, crush the ginger and garlic together using a mortar and pestle. Mix in the honey, lime juice, and fish sauce until well combined. Gradually whisk in the sunflower and sesame oil.
  4. Dice the cucumber, bell pepper, spring onions, and chili peppers. Put them in a bowl along with assorted salad greens, mint, and coriander.
  5. Cut the grilled squid into thin slices and add them to the salad bowl. Drizzle the dressing over the salad and sprinkle with sesame seeds.
