Spicy spring onion salad

- ½ tbsp toasted sesame oil
- 1 tsp gochugaru chilli flakes (see tip)

- Place the scallions and onion in a spacious container filled with cold water and let it soak for a minimum of 5 minutes (or a maximum of 2 hours) inside the refrigerator, until the scallions become curly.
- When you are prepared to present the dish, thoroughly drain the vegetables, remove excess water using a salad spinner or by patting them dry, and then move them to a moderate-sized bowl. Include the sesame oil, gochugaru, and a bit of salt, mix gently to cover the vegetables evenly. Present promptly.
