Spicy scallion and onion salad

Ingredients:

  • 1/4 medium white onion, thinly sliced
  • 1 bunch scallions, julienned
  • 1 tablespoon gochugaru (Korean red pepper powder)
  • 1 tablespoon sugar
  • 1 teaspoon kosher salt, plus more
  • 1/2 teaspoon freshly ground black pepper, plus more
  • 1 teaspoon distilled white vinegar

Instructions:

  1. Submerge onion and scallions in a medium bowl filled with cold water. Allow scallions to chill until they curl, for at least 20 minutes.
  2. In the meantime, blend gochugaru, sugar, 1 teaspoon of salt, 1/2 teaspoon of pepper, and 1 tablespoon of water in a medium bowl. Allow it to rest, stirring occasionally, until the sugar dissolves and the sauce appears glossy, approximately 10 minutes.
  3. Remove the onion and scallions from the water and either dry them in a salad spinner or pat them dry. Then, add them to the bowl with the gochugaru sauce. Mix in the vinegar and toss everything together until coated; adjust the seasoning with salt and pepper as needed.
  4. Preparation tip: You can soak the onion and scallions up to 1 day in advance. Store them in the refrigerator.
