Spicy scallion and onion salad

Ingredients:
- 1/4 medium white onion, thinly sliced
- 1 bunch scallions, julienned
- 1 tablespoon gochugaru (Korean red pepper powder)
- 1 tablespoon sugar
- 1 teaspoon kosher salt, plus more
- 1/2 teaspoon freshly ground black pepper, plus more
- 1 teaspoon distilled white vinegar
Instructions:
- Submerge onion and scallions in a medium bowl filled with cold water. Allow scallions to chill until they curl, for at least 20 minutes.
- In the meantime, blend gochugaru, sugar, 1 teaspoon of salt, 1/2 teaspoon of pepper, and 1 tablespoon of water in a medium bowl. Allow it to rest, stirring occasionally, until the sugar dissolves and the sauce appears glossy, approximately 10 minutes.
- Remove the onion and scallions from the water and either dry them in a salad spinner or pat them dry. Then, add them to the bowl with the gochugaru sauce. Mix in the vinegar and toss everything together until coated; adjust the seasoning with salt and pepper as needed.
- Preparation tip: You can soak the onion and scallions up to 1 day in advance. Store them in the refrigerator.
