Spicy pineapple kale salad

Indulge in the zesty flavors of our spicy pineapple kale salad! A delightful combination of sweet pineapples and savory kale leaves creating a burst of taste!

Ingredients:

  • 1 small head lacinato kale, Washed, spines removed, and thinly sliced
  • 1 1/2 cups cubed fresh pineapple
  • 1/4 cup chopped red onion
  • 1 red pepper, seeded and chopped
  • 1 jalapeño pepper, minced [remove seeds for less heat]
  • 1 lime, juiced
  • 1/2 small orange, juiced
  • 1/2 teaspoon cumin powder
  • 1 tablespoon hemp seeds
  • 1 teaspoon olive oil [optional]
  • salt and freshly ground pepper to taste

Instructions:

  1. Take kale and place it in a medium-sized bowl. Gently massage the kale by squeezing it in your hands until it becomes wilted, which should take around 2 minutes.
  2. In another bowl, mix together pineapple, cilantro, onion, red pepper, jalapeño, lime juice, orange juice, and ground cumin. Mix thoroughly and let it sit for 15 minutes.
  3. Combine the pineapple mixture with the kale.
  4. Add salt and pepper for seasoning. If you like, drizzle some olive oil and sprinkle hemp seeds on top just before serving.
  5. Please note that the pineapple mixture can be prepared in advance. Combine it with the kale when you are ready to serve.
