Spicy pineapple kale salad
Indulge in the zesty flavors of our spicy pineapple kale salad! A delightful combination of sweet pineapples and savory kale leaves creating a burst of taste!
Ingredients:
- 1 small head lacinato kale, Washed, spines removed, and thinly sliced
- 1 1/2 cups cubed fresh pineapple
- 1/4 cup chopped red onion
- 1 red pepper, seeded and chopped
- 1 jalapeño pepper, minced [remove seeds for less heat]
- 1 lime, juiced
- 1/2 small orange, juiced
- 1/2 teaspoon cumin powder
- 1 tablespoon hemp seeds
- 1 teaspoon olive oil [optional]
- salt and freshly ground pepper to taste
Instructions:
- Take kale and place it in a medium-sized bowl. Gently massage the kale by squeezing it in your hands until it becomes wilted, which should take around 2 minutes.
- In another bowl, mix together pineapple, cilantro, onion, red pepper, jalapeño, lime juice, orange juice, and ground cumin. Mix thoroughly and let it sit for 15 minutes.
- Combine the pineapple mixture with the kale.
- Add salt and pepper for seasoning. If you like, drizzle some olive oil and sprinkle hemp seeds on top just before serving.
- Please note that the pineapple mixture can be prepared in advance. Combine it with the kale when you are ready to serve.
