Spicy lamb pizza with parsley–red onion salad

Ingredients:

  • garlic cloves, finely grated
  • cup tomato paste
  • teaspoon ground cinnamon
  • teaspoon ground cumin

  • teaspoon kosher salt, plus more
  • ounces ground lamb
  • All-purpose flour (for dusting)
  • ounces prepared pizza dough, cut in half, room temperature
  • tablespoons olive oil, divided, plus more for drizzling
  • small red onion, thinly sliced
  • cup parsley leaves with tender stems
  • tablespoon fresh lemon juice
  • Crushed red pepper flakes (for serving)

Instructions:

  1. Place a baking sheet on a lower rack in the oven and preheat it to 500°F. Combine minced garlic, tomato paste, ground cinnamon, ground cumin, paprika, and ¾ teaspoon of salt in a large bowl. Incorporate the lamb into the mixture.Take one portion of the dough, keeping the rest covered, gently stretch it into an oval shape measuring 10x8 inches and place it on a baking sheet lined with parchment paper and lightly floured. If the dough bounces back, cover and let it sit for 10 minutes, then stretch it again as needed. Crumble half of the lamb mixture over the dough and brush the edges with 1 tablespoon of oil. Transfer the pizza onto the preheated baking sheet and bake until the crust turns golden brown, approximately 6 to 8 minutes. Move the pizza to a wire rack. Repeat the process with the remaining dough, lamb mixture, and another tablespoon of oil. Drizzle the pizzas with additional oil.In a bowl, mix together sliced onions, chopped parsley, and freshly squeezed lemon juice; season with salt. Spread this mixture over the pizzas and sprinkle with red pepper flakes.
