Spicy chickpea salad

Ingredients:

  • 1 tablespoon olive oil
  • 1 green garlic
  • 1 8 oz. can cooked chickpeas
  • 1 teaspoon cumin powder
  • 1/2 teaspoon cinnamon
  • 1/2 tablespoon curry powder
  • 1 handful fresh cilantro, chopped
  • 1/2 avocado
  • salt and pepper to taste

Instructions:

  1. Heat up some oil in a pan over medium high heat.
  2. Give the chickpeas a quick rinse, then put them in the heated pan. Sprinkle with spices and salt to your liking. Cook for 5 minutes by stirring occasionally.
  3. Slice the green garlic thinly and toss it into the pan. Let it cook for an additional five minutes.
  4. Take the pan off the heat. Gently stir in cilantro and diced avocado.
