Spicy black bean and quinoa salad

Ingredients:
- 1/2 cup red quinoa (or sprouted quinoa)
- 1 cup water
- Juice and zest of one lime, about 1.5-2 oz. juice, and 1-2 teaspoons zest
- Kosher or sea salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon chipotle powder
- 1/4 cup extra virgin olive oil
- 3 scallions, thinly sliced (white and green parts)
- 1 cup roasted red/yellow bell peppers, chopped
- 1.5 to 2 cups cups cooked black beans
- 1/4 cup picked fresh cilantro, roughly chopped
Instructions:
- Combine the quinoa and water in a small saucepan and bring it to a boil. Once boiling, cover the saucepan, lower the heat, and let it simmer for around 15 minutes. Use a fork to separate the grains and then set it aside.
- In a spacious bowl, mix together the lime juice, lime zest, a couple of pinches of salt, chili powder, chipotle powder, and cumin. Drizzle in the olive oil and whisk everything until the dressing is uniform.
- Mix the quinoa into the prepared dressing and stir well. Introduce the scallions, red peppers, black beans, and cilantro to the bowl and mix thoroughly. You can top it off with more cilantro and lime zest for extra flavor, if preferred.
