Spiced white melon salad

Ingredients:
- 1/2 small melon
- 2 tablespoons unseasoned rice wine vinegar
- 2 pinches sumac
- 1 pinch aleppo pepper
- 1 pinch sea salt
- 1/4 cup soft sheep milk feta
- 1 tablespoon olive oil
Instructions:
- Place your melon in the refrigerator for a minimum of one hour. Cut the melon in half and remove the seeds and white inner part using a wide metal spoon. Cut the melon into desired shapes like small cubes or large thin triangles.
- Transfer the melon to a bowl and mix in rice vinegar and seasonings. Sprinkle crumbled feta cheese on top and drizzle with olive oil. Serve the dish cold. If preferred, allow the melon to pickle slightly in vinegar for one to two hours before serving.
