Spiced niçoise salad

Ingredients:

  • Kosher salt
  • 230g green beans, trimmed
  • 3 large eggs
  • 1 to 2 tablespoons harissa, to taste
  • 1/2 teaspoon finely grated lemon zest plus 1 tablespoon lemon juice
  • Freshly ground pepper
  • 1/4 cup extra-virgin olive oil
  • 1 15-ounce can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 2 hearts romaine lettuce, chopped
  • 2 5-ounce cans oil-packed tuna, drained
  • 12 pitted kalamata olives, halved
  • 2 pieces flatbread, toasted and cut into wedges

Instructions:

  1. Start by heating a medium saucepan filled with salted water until it reaches a boiling point. Drop in the green beans and cook them until they are tender but still slightly firm, usually around 2 to 3 minutes. Use tongs to remove the beans from the water and transfer them to a large bowl filled with ice water to halt the cooking process. Remember to keep the pot of water for later use. Once the green beans have cooled down completely, take them out, dry them off using paper towels.
  2. Bring the water back to a gentle simmer. Gently place the eggs into the water and let them cook for about 10 minutes. Next, drain the water and rinse the eggs under cold running water. Peel the hard-boiled eggs and cut them into wedges.
  3. While the eggs are cooking, in a medium bowl, mix together the harissa, 1 tablespoon of water, lemon zest, lemon juice, 1/2 teaspoon of salt, and some pepper. Gradually pour in the olive oil while whisking continuously until the mixture becomes smooth. Add in the chickpeas and tomatoes, allowing them to soak in the marinade for about 10 minutes. Adjust the seasoning with salt as needed.
  4. Arrange the romaine lettuce in bowls. Top them with the marinated chickpea mixture, green beans, tuna, eggs, and olives. Drizzle any remaining dressing from the bowl over the bowls. Serve alongside the flatbread.
