Spiced feta, pistachio & clementine salad
Delight your taste buds with a vibrant and flavorful combination of spiced feta, crunchy pistachios, and juicy clementines in this refreshing salad.
Ingredients:
- 180g feta, crumbled
- 250g Greek yogurt
- ½ tsp chilli flakes
- 2 tbsp za’atar or mixed dried herbs
- 70ml extra virgin olive oil
- 1 tbsp honey
- 2 tbsp white wine vinegar
- 1 large banana shallot, very thinly sliced into rings
- 150g rocket
- 4 clementines, peeled and sliced horizontally
- ½ small bunch of mint
- 40g pistachios, chopped
- 50g pomegranate seeds
Instructions:
- Combine the feta and yogurt along with half a teaspoon of salt in a bowl and blend thoroughly using a fork. Transfer the mixture into a sieve placed over a bowl for 3 hours, then refrigerate overnight. Once chilled, shape the mixture into 12 walnut-sized balls. Combine the chili and za’atar, then coat the feta balls by rolling them in the mixture. Refrigerate for 30 minutes. Store in the fridge in a sealed container for up to three days covered with olive oil.
- Whisk together the oil, honey, vinegar, and seasonings according to your taste. Mix the shallots, rocket, clementine slices, and mint. Plate this mixture with the feta balls on top and drizzle the dressing over it. Sprinkle with chopped pistachios and pomegranate seeds.
