Spiced chickpeas mango salad .

Ingredients:

  • 2 cups Chickpeas.
  • 1/2 cup Grated or desiccated coconut
  • 1/4 cup Mangoes ( cut length wise )
  • 1 teaspoon Mustard seeds
  • 10 Curry leaves
  • 1 pinch Asafoetida
  • 2 Dried chillies
  • 1/2 teaspoon Salt

Instructions:

  1. Start by washing the chickpeas and letting them soak for 6 to 8 hours.
  2. After soaking, place the chickpeas in a pot with 3-4 cups of water and 1/4 tsp of salt. Boil them on medium heat for about 15 minutes. Once done, make sure to drain all the water from the chickpeas.
  3. Take a skillet and heat some vegetable oil over medium heat.
  4. Once the oil is heated, toss in the mustard seeds and let them splutter.
  5. Next, add the red chillies, curry leaves, and asafoetida. Sauté for about 5 seconds.
  6. Add the cooked chickpeas, the remainder of the salt, and stir everything continuously for 3 minutes.
  7. Turn off the stove, mix in the grated coconut, and stir well.
  8. Decorate with mango slices and transfer to a serving dish.
