Spiced carrot salad with yogurt pitas

Ingredients:

  • 4 carrots, shredded
  • 1 clove garlic, minced
  • 2 teaspoons ground coriander
  • 1/4 teaspoon paprika
  • Freshly ground pepper
  • 1 tablespoon white wine vinegar
  • Vegetable oil, for sauteing
  • 1 small white onion, diced
  • 1/4 cup fresh cilantro leaves
  • Greek yogurt, for serving
  • 24 pita chips, for serving

Instructions:

  1. Mix the carrots, minced garlic, ground coriander, paprika, 1/4 teaspoon of pepper, and vinegar in a bowl.
  2. Heat a bit of oil in a heated pan and put in the onions. Sauté until they turn golden, approximately for 5 minutes. Transfer the sautéed onions onto the carrot mixture and mix well. Put a cover on the bowl and chill it for at least 2 hours or you can also refrigerate it overnight.
  3. Right before presenting it, throw in the cilantro leaves to the carrot mixture. Smear the Greek yogurt on the pita chips and serve with the carrot salad.
