Spiced carrot salad

Ingredients:
- ¼ cup golden raisins
- 2 ½ tablespoons fresh lemon juice (from 1 lemon)
- 1 bunch rainbow carrots with tops (about 1 lb.)
- 2 tablespoons olive oil
- 1 garlic clove, chopped
- ¼ teaspoon cumin seeds
- ¼ teaspoon crushed red pepper
- ¼ teaspoon sea salt
- Freshly ground black pepper
Instructions:
- Put raisins and lemon juice in a small bowl and allow them to sit until the raisins swell slightly, approximately for 5 minutes.
- Trim the ends of the carrots and chop them until you have a quarter cup; keep it aside. Shred the carrots using a food processor with the shredding attachment and transfer them to a large bowl. (You may also use store-bought shredded carrots and chopped parsley).
- Warm oil in a small skillet over medium heat. Add minced garlic and cook while stirring continuously until it becomes aromatic, for about half a minute. Mix in cumin seeds and crushed red pepper, and cook while stirring continuously until aromatic, about 30 seconds.
- Combine the garlic mixture with the shredded carrots; mix in the plumped raisins and lemon juice. Season with salt and a few twists of black pepper. Toss in the carrot greens and mix to blend.
