Spiced carrot salad

Ingredients:
- 450g carrots, peeled and thinly sliced on the bias
- 2 teaspoons olive oil
- 1/2 teaspoon ground cumin
- 2 large garlic cloves, minced
- 1/2 teaspoon honey
- 2 tablespoons chopped fresh cilantro
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 dash cayenne pepper
- 1 teaspoon grated lemon zest
- Juice of 1/2 lemon
Instructions:
- Boil carrots in a pot of water with a good amount of salt until they are slightly tender, which should take around 5 minutes.
- Meanwhile, mix together oil, cumin, minced garlic, honey, cilantro, salt, black pepper, cayenne pepper, lemon zest, and lemon juice in a medium-sized bowl. Stir until everything is well combined.
- Once the carrots are cooked, drain them well. Add the warm carrots to the bowl with the prepared dressing. Mix everything together until the carrots are evenly coated.
- You can either serve the dish at room temperature or chill it before serving.
