Spiced carrot salad

Delight your taste buds with this aromatic spiced carrot salad. Bursting with flavors of exotic spices, fresh herbs, and crunchy carrots.

Ingredients:

  • 450g carrots, peeled and thinly sliced on the bias
  • 2 teaspoons olive oil
  • 1/2 teaspoon ground cumin
  • 2 large garlic cloves, minced
  • 1/2 teaspoon honey
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 dash cayenne pepper
  • 1 teaspoon grated lemon zest
  • Juice of 1/2 lemon

Instructions:

  1. Boil carrots in a pot of water with a good amount of salt until they are slightly tender, which should take around 5 minutes.
  2. Meanwhile, mix together oil, cumin, minced garlic, honey, cilantro, salt, black pepper, cayenne pepper, lemon zest, and lemon juice in a medium-sized bowl. Stir until everything is well combined.
  3. Once the carrots are cooked, drain them well. Add the warm carrots to the bowl with the prepared dressing. Mix everything together until the carrots are evenly coated.
  4. You can either serve the dish at room temperature or chill it before serving.
