Spanish potato salad

Ingredients:

  • 1/4 cup red wine vinegar
  • 1 tablespoon honey
  • 1 pinch saffron threads
  • 1 cup good quality mayonnaise
  • 1 tablespoon minced garlic
  • Salt and freshly ground pepper
  • 910g new potatoes
  • 1 large tomato, coarsely chopped
  • 1/2 cup finely diced Spanish onion
  • 1 tablespoon finely chopped fresh thyme
  • 1/4 cup coarsely chopped flatleaf parsley

Instructions:

  1. Mix the vinegar, honey, and saffron in a small saucepan. Boil over high heat, then take it off the heat and allow it to cool to room temperature. In a medium bowl, blend the mayonnaise and garlic with the saffron mix and add salt and pepper to taste.
  2. Boil the potatoes in a big pot of salted water until they are soft. Drain them and cut them into 1/2-inch slices. Put them in a large bowl and gently stir in the mayonnaise mixture, tomatoes, onion, thyme, and parsley. Add salt and pepper to taste.
