Sour cherry bulgur salad

Tangy sour cherries paired with hearty bulgur create a refreshing salad bursting with vibrant flavors. This culinary creation is a perfect balance of sweet and savory, making it a deliciously satisfying dish.

Ingredients:

  • Kosher salt and freshly ground pepper
  • Olive oil, for drizzling 
  • 1 cup bulgur wheat 
  • 1 cup chopped sour cherries 
  • 2/3 cup finely chopped fresh parsley
  • 2/3 cup finely chopped toasted walnuts 
  • 1/2 cup finely chopped red onion 
  • 1/2 cup finely chopped fresh dill
  • 1/4 cup extra-virgin olive oil 
  • 2 tablespoons lemon juice 
  • 2 cloves grated garlic 
  • 1/2 cup crumbled feta 

Instructions:

  1. Pour 2 cups of water into a medium saucepan. Add salt, a bit of olive oil, and then mix in the bulgur. Wait for the water to boil on high heat, then put a lid on it, reduce the heat to low and cook until the bulgur is soft, which takes about 1 hour. Let the bulgur cool down to room temperature.
  2. In a large bowl, mix together the bulgur wheat, cherries, parsley, walnuts, red onion, and dill, keeping a small amount of each herb aside for decoration. Gently stir the ingredients. Add some extra-virgin olive oil, lemon juice, grated garlic, and season according to your taste. Move the mixture to a serving bowl and decorate with feta cheese, the herbs you set aside earlier, and a drizzle of olive oil.
