Sour cherry bulgur salad

Ingredients:
- Kosher salt and freshly ground pepper
- Olive oil, for drizzling
- 1 cup bulgur wheat
- 1 cup chopped sour cherries
- 2/3 cup finely chopped fresh parsley
- 2/3 cup finely chopped toasted walnuts
- 1/2 cup finely chopped red onion
- 1/2 cup finely chopped fresh dill
- 1/4 cup extra-virgin olive oil
- 2 tablespoons lemon juice

Instructions:
- Pour 2 cups of water into a medium saucepan. Add salt, a bit of olive oil, and then mix in the bulgur. Wait for the water to boil on high heat, then put a lid on it, reduce the heat to low and cook until the bulgur is soft, which takes about 1 hour. Let the bulgur cool down to room temperature.
- In a large bowl, mix together the bulgur wheat, cherries, parsley, walnuts, red onion, and dill, keeping a small amount of each herb aside for decoration. Gently stir the ingredients.
