Som tam (thai-style green papaya salad)
Experience the vibrant flavors of Thailand with this refreshing Som Tam salad. Featuring green papaya, herbs, and a zesty dressing bursting with taste.
Ingredients:
- 2 medium garlic cloves
- 1 to 2 fresh green Thai chiles, to taste
- 4 cherry tomatoes, halved
- 3/110g long beans or haricots verts, trimmed and cut into 3/4-inch pieces (about 1/4 cup)
- 1/4 cup unsalted dry-roasted peanuts
- 3 tablespoons dried small shrimp (such as Greenlike)
- 1 1/2 tablespoons palm sugar
- 1 1/2 tablespoons Thai fish sauce
- 1 tablespoon tamarind juice
- 1 tablespoon fresh lime juice
- 1 cup julienne-cut green papaya (1/16- to 1/8-inch-thick strips) (see Note)

- Gently crush garlic and chiles with a mortar and pestle (wooden is preferred) until they are broken down and a paste starts to form.

- Combine tomatoes, long beans, peanuts, and dried shrimp in the mortar, then roughly crush them using the pestle until peanuts are crushed and tomatoes are slightly crushed.

- Mix palm sugar, fish sauce, tamarind juice, and lime juice together, then stir with a large spoon. Add papaya, and gently pound with the pestle while simultaneously mixing and tossing the mixture with the spoon until the dressing is absorbed. (Be cautious not to over-pulverize; papaya should stay crisp.) Serve right away.
