Soba noodle salad with spring herbs

Fresh soba noodle salad featuring a vibrant mix of spring herbs, creating a delightful culinary experience bursting with flavor.

Ingredients:

  • 1/4 cup fresh chives, chopped finely
  • 1/4 cup fresh mint leaves, chopped finely
  • 1/4 cup fresh cilantro, chopped finely
  • 3 scallions, sliced thinly
  • 1 cup cucumber, diced quite small
  • 1/3 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grapeseed oil
  • 8oz dry soba noodles
  • 1 1/2 teaspoons sugar
  • 1 teaspoon salt
  • enough sesame seeds to garnish

Instructions:

  1. Prepare all herbs, cucumber, and scallions in advance to have them ready once your noodles are done cooking.
  2. Bring water to a boil in a medium-sized pot. In the meantime, combine vinegar, soy sauce, sesame oil, grapeseed oil, sugar, and salt in a large bowl. Mix until the sugar is fully dissolved.
  3. Once the water is boiling, cook the noodles in the pot for about 3 minutes. Then, drain them in a colander and rinse thoroughly with cold water.
  4. Combine the rinsed noodles with the oil and vinegar mixture in the bowl. Mix thoroughly to ensure the noodles are coated evenly. Add the herbs, cucumber, and scallions, mix well, and sprinkle with sesame seeds before serving.
