Soba noodle salad with salmon and asparagus
Delight your taste buds with a flavorful Soba noodle salad featuring succulent salmon and crisp asparagus. A harmonious blend of textures and flavors in every bite!
Ingredients:
- tablespoons extra-virgin olive oil
- tablespoons soy sauce
- tablespoons unseasoned rice vinegar
- tablespoon honey
- teaspoon finely grated peeled fresh ginger
- Fine sea salt
- 1/60g soba (Japanese-style noodles)
- tablespoon vegetable oil
- ounces wild salmon fillet, skinned
- ounces thick asparagus spears, trimmed, cut on diagonal into 1-inch pieces
- 1/60g baby spinach leaves (5 to 6 cups)
- avocado, peeled, pitted, coarsely chopped
- teaspoon sesame seeds
Instructions:
- Combine the first 5 ingredients by vigorously mixing them in a small bowl. Add sea salt and freshly ground black pepper to the dressing according to your preference.
- Boil soba noodles in a large saucepan with salted water until they are cooked but still slightly firm, stirring occasionally. Drain the noodles and then put them in a bowl of ice-cold water to cool down. Drain them properly and transfer to a large bowl. Pour the prepared dressing over them and mix well.
- In a heavy medium nonstick skillet, heat vegetable oil over medium-high heat. Season the salmon with sea salt and pepper. Cook the salmon until it is browned outside but remains pink inside, for approximately 3 minutes on each side. Transfer the salmon to a plate and let it cool slightly. Clean the skillet and pour water into it until it reaches a depth of 1 inch. Bring the water to a boil, add sea salt, and put in the asparagus. Cook until the asparagus is tender but still crisp, which takes about 3 to 4 minutes. Drain the asparagus and add them along with spinach to the noodles, mixing everything well. Season with sea salt and pepper according to your taste. Divide the noodle salad into plates and break the salmon into small pieces. Arrange the salmon and avocado on top of the noodles on each plate. Sprinkle sesame seeds over the dish and serve.
