Soba noodle salad

Delicious Soba noodle salad, bursting with Asian flavors. Fresh, light, and full of umami goodness. The perfect fusion of textures and tastes.

Ingredients:

  • 6 Tbsp seasoned rice vinegar
  • 1 Tbsp sugar
  • 1/4 teaspoon salt
  • 1 large garlic clove, minced
  • 1 1/2 Tbsp fresh lime juice
  • Zest of one lime
  • 1 1/2 teaspoons dark sesame oil
  • 6 ounces soba noodles
  • 1/2 large red bell pepper, chopped
  • 1 small ripe mango, peeled and chopped into cubes
  • 1/2 cup thinly sliced fresh basil
  • 1/2 cup thinly sliced fresh mint
  • 1/2 cup chopped toasted salted peanuts

Instructions:

  1. Combine the rice vinegar, sugar, and salt in a saucepan and heat on medium for 1-2 minutes until the sugar and salt have fully dissolved. Mix in the garlic and let it cool down. Then, incorporate the lime juice, lime zest, and sesame oil, making sure to mix everything thoroughly.
  2. Boil the noodles in salted water until they reach an al dente texture, following the instructions on the package. Once cooked, drain the noodles and rinse them thoroughly with cold water. Place the noodles in a large bowl and mix them with the prepared dressing.
  3. Mix in the mango, bell pepper, basil, and mint. Combine well and arrange on a plate. Sprinkle chopped peanuts on top before serving.
