Smokin' potato salad

Ingredients:

  • 910g Yukon gold potatoes (5 to 6 potatoes)
  • 2 teaspoons smoked paprika
  • Kosher salt and freshly cracked pepper
  • 1 cup diced celery (from 2 to 3 stalks)
  • 1/2 small red onion, finely diced
  • 1 tablespoon minced fresh cilantro
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 2 teaspoons chopped capers
  • Juice of 1/2 lemon

Instructions:

  1. Heat up the grill to a medium temperature. Ensure the grill grates are coated with oil.
  2. Cut the potatoes into long slices approximately 3/4 inch thick. Put the potatoes in a bowl and mix in 2 tablespoons of canola oil, paprika, 2 teaspoons of salt, and 2 teaspoons of pepper. Stir well to cover the potatoes with the mixture.
  3. Place the potato slices on the grill, cover it, and cook for about 5 minutes. Then, rotate the slices by 90 degrees and continue cooking for another 5 to 10 minutes. Flip the potatoes and repeat the process on the other side. They should be slightly inflated and have a golden-brown color. Take them out and let them cool down. Cut them into pieces of 3/4 to 1 inch.
  4. In a big glass bowl, mix together the diced potatoes, celery, red onion, and cilantro. In a medium glass bowl, combine sour cream, mayonnaise, mustard, 1 teaspoon of salt, 2 teaspoons of pepper, capers, and lemon juice. Adjust the salt according to your taste.
  5. Gently mix the mayonnaise mixture into the potato mixture until well-coated. Cover it and put it in the refrigerator for 20 to 30 minutes. Stir and adjust the seasoning if necessary.
