Smokin' potato salad

Ingredients:
- 910g Yukon gold potatoes
- 2 tablespoons canola oil, plus more for grill
- 2 teaspoons smoked paprika
- Kosher salt and fresh cracked black pepper
- 1 cup small diced celery
- 1/2 small red onion, finely diced
- 1 tablespoon minced fresh cilantro
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon yellow mustard
- 2 teaspoons chopped capers
- 1/2 lemon, juiced
Instructions:
- Heat up a grill until it reaches medium temperature. Grease the grill grates generously.
- Cut the potatoes into 3/4-inch thick slices lengthwise. Put the potatoes in a bowl, then add the oil, paprika, and season it with 2 teaspoons of salt and pepper each. Mix well to ensure all the potatoes are coated.
- Place the potatoes on the grill and cook until they become slightly puffed and turn a nice golden brown on both sides. This usually takes 20 to 30 minutes. Rotate the potatoes by 90 degrees after 5 minutes, flip them over, and repeat the process on the other side. Once done, take them off the grill and let them cool down completely. Cut them into 3/4 to 1-inch pieces.
- In a large bowl made of glass, combine the diced potatoes, celery, red onions, and cilantro.
- In a medium glass bowl, mix together the sour cream, mayonnaise, mustard, 1 teaspoon of salt, 2 teaspoons of pepper, capers, and lemon juice. Adjust the salt to suit your taste.
- Gently combine the mayonnaise mixture with the potato mixture. Cover the bowl and refrigerate for 20 to 30 minutes. After refrigeration, stir the mixture and adjust the seasoning if necessary.
