Smoked salmon salad nicoise

Ingredients:
- 230g small red potatoes, scrubbed and halved
- 170g green beans, preferably thin haricots verts, trimmed and halved
- 2 tablespoons reduced-fat mayonnaise
- 1 tablespoon white-wine vinegar
- 1 teaspoon lemon juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- ½ teaspoon dried dill
- ¼ teaspoon freshly ground pepper
- 6 cups mixed salad greens
- ½ small cucumber, halved, seeded and thinly sliced
- 12 small cherry or grape tomatoes, halved
- 110g smoked salmon, cut into 2-inch pieces
Instructions:
- Prepare a bowl filled with ice water near the stove. Boil 1 inch of water in a large saucepan. Place the potatoes in a steamer basket over the boiling water, cover and steam until they are easily pierced with a fork, which usually takes around 10 to 15 minutes. Use a slotted spoon to transfer the potatoes to the ice water. Then, add the green beans to the steamer, cover, and steam until they are tender-crisp, typically for about 4 to 5 minutes. Transfer the green beans to the ice water using a slotted spoon. Finally, place the potatoes and green beans on a baking sheet lined with a towel to let them drain. While the vegetables are cooling, mix together mayonnaise, vinegar, lemon juice, Worcestershire sauce, mustard, dill, and pepper in a large bowl. Combine the potatoes, green beans, salad greens, cucumber, and tomatoes in the bowl; gently toss all the ingredients to ensure they are evenly coated with the dressing. Serve the salad and smoked salmon on two plates.
