Smoked salmon pasta salad

Savor the flavorful combination of smoked salmon and pasta in this tantalizing salad. A perfect balance of freshness and richness in every bite.

Ingredients:

  • 230g whole-wheat pasta
  • 5 tablespoons extra-virgin olive oil
  • 5 cloves garlic, chopped
  • 1 teaspoon anchovy paste
  • ¼ teaspoon crushed red pepper
  • Zest and juice of 1 lemon
  • 1 1/2 cups flaked cooked salmon (see Associated Recipes)
  • 3 tablespoons chopped fresh parsley
  • ¼ teaspoon salt
  • 2 tablespoons whole-wheat breadcrumbs, toasted

Instructions:

  1. Prepare the pasta as instructed on the package. Once cooked, drain the pasta and set aside 1/2 cup of the cooking water.
  2. In a large skillet, mix together oil, minced garlic, anchovy paste, crushed red pepper, lemon zest, and lemon juice. Cook over medium-high heat until the mixture starts to sizzle, which should take around 3 minutes. Then, add the reserved cooking water, pasta, salmon, parsley, and salt. Stir and cook until the sauce nicely covers the pasta, approximately 2 minutes. Serve the dish garnished with breadcrumbs.
