Smoked macaroni salad

Ingredients:

  • Kosher salt
  • 450g elbow macaroni 
  • 1 1/2 cups mayonnaise 
  • 3 stalks celery, small diced (about 1 1/2 cups) 
  • 1/2 bunch green onions, greens parts only, sliced (about 1/2 cup), plus for garnish 
  • 5 tablespoons apple cider vinegar 
  • 3 tablespoons whole-grain mustard 
  • 3 tablespoons bourbon whiskey
  • 2 tablespoons honey 
  • 2 teaspoons salt 
  • 1 teaspoon ground black pepper 
  • 1/2 to 1 teaspoon liquid smoke 

Instructions:

  1. Cook the macaroni in a large pot of water with plenty of salt until it is firm to the bite, following the instructions on the package. Drain the pasta and put it in a big bowl. Add 2 tablespoons of mayonnaise, chopped celery, and green onions. Mix everything well.
  2. In another bowl, mix the leftover mayonnaise with cider vinegar, mustard, bourbon, honey, salt, pepper, and liquid smoke. Stir the mixture until it is uniform, then pour it over the macaroni. Taste the dish and add more seasonings if necessary.
  3. Put the bowl in the refrigerator for 1 to 3 hours to let the flavors blend together. Add some chopped green onions on top before serving.
