Ingredients:
- 1/2 cup walnuts
- 2 tablespoons dried currants
- 1/4 cup plus 1 tablespoon heavy cream
- 3 tablespoons Dijon mustard
- 1 1/2 tablespoons Pernod
- 1 1/2 tablespoons red wine vinegar
- 1 large garlic clove, minced
- Salt and freshly ground pepper
- 6 cups packed frisée (about 170g)
- 1/2 small onion, thinly sliced
- 450g thickly sliced smoked ham, sliced 1/4 inch thick, then cut into matchsticks 1/3 inch thick
Instructions:
- Heat up the oven to 350°. Place the walnuts on a pie plate and bake for 7 minutes, or until they turn slightly brown. Allow them to cool down, then roughly chop them.
- Place the currants in a small heatproof bowl and cover them with hot water. Let them sit for about 10 minutes until they soften; then, drain the water.
- In a separate small bowl, mix together the cream, mustard, Pernod, vinegar, and garlic. Season the mixture with salt and pepper.
- In a big bowl, mix the frisée with the onion and softened currants. Add 1/4 cup of the prepared dressing and mix well. Move the salad to a serving dish. Place the ham in the same bowl, mix gently with the remaining dressing, and spread it over the salad. Sprinkle the toasted walnuts on top before serving.
