Smashed cucumber salad with mint

Ingredients:
- 6 Persian cucumbers
- Kosher salt
- 1 tablespoon lemon juice
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh mint leaves, finely chopped
- 1 tablespoon olive oil
- 2 teaspoons za'atar
- 2 radishes, thinly sliced
- Freshly ground black pepper
Instructions:
- Put the cucumbers into a big resealable bag and crush them using a weighty pan. Cut into pieces that are 3/4 inch in size, put them in a strainer with a small amount of salt and allow them to rest for half an hour.
- While waiting, mix the lemon juice and onion in a big bowl and allow it to rest until the cucumbers are prepared.
- Combine the cucumbers with the onion in the bowl. Mix in the mint, olive oil, za'atar, radishes, and some freshly ground pepper. Chill in the fridge for a minimum of 30 minutes before serving.
