Smashed cucumber salad with mint

Ingredients:

  • 6 Persian cucumbers
  • Kosher salt 
  • 1 tablespoon lemon juice 
  • 1/2 small red onion, thinly sliced 
  • 1/4 cup fresh mint leaves, finely chopped 
  • 1 tablespoon olive oil 
  • 2 teaspoons za'atar 
  • 2 radishes, thinly sliced 
  • Freshly ground black pepper

Instructions:

  1. Put the cucumbers into a big resealable bag and crush them using a weighty pan. Cut into pieces that are 3/4 inch in size, put them in a strainer with a small amount of salt and allow them to rest for half an hour.
  2. While waiting, mix the lemon juice and onion in a big bowl and allow it to rest until the cucumbers are prepared.
  3. Combine the cucumbers with the onion in the bowl. Mix in the mint, olive oil, za'atar, radishes, and some freshly ground pepper. Chill in the fridge for a minimum of 30 minutes before serving.
